Frying: Dip fillets in milk or beaten egg; coat with flour or cornmeal. Fry in small amount of oil in skillet for 3 - 4 minutes on each side until golden brown. Or, deep fry in 370 degrees F oil for 4 - 5 minutes. Baking: Place fillets in greased, shallow baking pan. Brush with oil or melted butter or margarine and bake uncovered at 400 degrees F for 20 - 30 minutes or until fish flakes easily with fork. Broiling: Place fillets in greased broiler pan. Brush with oil or melted butter or margarine and broil for 10 - 15 minutes or until fish flakes easily with fork. Microwave: In a microwave-safe dish, place fillets in a single layer with the thickest parts towards the edge of the dish. Cover; microwave on High (100% power) for 3 minutes per pound of fish. Let stand, covered, for 3 - 5 minutes.
