This casserole is based on a popular Mexican dish called Chilaquiles. When Amy's parents first tasted it in Oaxaca they came back and asked Amy's chefs to find the recipe. One of the chefs (whose family had owned a Mexican restaurant in San Francisco) was already familiar with the dish and adapted it to suit Amy's standards - organic ingredients, fewer hot spices, and less fat. The result is delicious and might remind you of a bowl of nachos made with organic baked corn chips and melted cheddar and jack cheeses. Plus, an assortment of organic vegetables and our own homemade fresh tofu. On the side are delicately seasoned slow-cooked black beans, making this gluten free meal in a bowl thoroughly satisfying. 0 g trans fat. No added MSG. No preservatives. No GMOs - no bioengineered ingredients. All dairy ingredients are made with pasteurized, rBST hormone free milk and do not contain animal enzymes or rennet. Certified organic by QAI. After the birth of our daughter Amy in 1987 we found there was little time to prepare the wholesome nutritious food we normally ate. Realizing there were others like ourselves, we set up Amy's Kitchen to produce delicious, nourishing frozen meals for health-conscious people too busy to cook. We use only the finest natural and organic ingredients and prepare them with the same careful attention in our kitchen as you would in your own home. No meat, fish, shellfish, poultry, eggs or peanuts are ever used in any Amy's products. Amy's Kitchen does not use any peanuts, fish, shellfish or eggs.
Keep frozen. Conventional Oven: Preheat oven to 400 degrees. Remove overwrap and cover bowl with foil. Place bowl on a cookie sheet and bake for 40-45 minutes or until heated throughout. Microwave Oven: Make a 2 inch slit in overwrap. Cook on High for 4-5 minutes or until hot. Toaster Oven: Remove all packaging. Transfer product to a toaster oven-safe dish. Cook using the conventional oven instructions shown above. Ovens vary so please use these instructions as a guide to the best preparation for your oven.
